GOLDEN VALLEY, Minn. -- The 2011 Minnesota State Fair is just around the corner. And, there will be a lot of great new food this year. One of those items will be Famous Dave's Jalapeño Pickled Red Onions.
Charlie Torgerson of Famous Dave's stopped by KARE 11 Today to grill up a sample and share the recipe.
Jalapeño Pickled Red Onions
YIELD: 1 quart
Red Onions - 1 pound, slice in 1/4" strips
Jalapeno - 2, split lengthwise and sliced in strips
Cider Vinegar - 2 cups
Brown Sugar - 2/3 Cup
Thyme, ground - 1/4 Tsp.
Kosher Salt - 1/4 Tsp.
1. Place cider vinegar, brown sugar, thyme and salt in sauce pot. Heat on low flame until brown sugar is dissolved - approximately 5 minutes. Let cool to room temperature.
2. Pour over red onion and jalapeno, mix well. Place into plastic container. Refrigerate for 8 hours before using.
