GOLDEN VALLEY, Minn -- Summer slow cooker recipes may be all the rage, but some slow cooker recipes can feel a little too "January." However, it is possible to enjoy the convenience of slow cooker recipes, while still enjoying the fresh tastes of summer.
Chef Rachael Perron of Kowalski's joined us in the kitchen to show how to make an easy, breezy and refreshing summer meal in your crock pot.
SUMMER SLOW COOKER TURKEY SANDWICHES
2-3 lb. bone-in, skin-on turkey breast
1 tsp. coarse ground black pepper, plus extra for seasoning
2 tsp. kosher salt, plus extra for seasoning
2 cups chicken stock
- 8 Kowalski's Sweet Egg Buns
- softened unsalted butter
- garnishes, as desired: sliced green heirloom tomato, sliced red onion, Kowalski's Guacamole Ole and Kowalski's Fresh Cilantro
Season turkey with salt and pepper; place in a slow cooker. Add chicken stock. Cook on high 5-6 hrs. or low 7-8 hrs. Remove turkey from the cooker, discard skin and bones. Strain cooking liquid to remove small fragments of bone; return liquid to pot. Shred turkey and return to the pot; adjust salt and pepper to taste. Spread cut sides of each bun with a small amount of butter; cook, cut side down, on a nonstick griddle heated to medium until golden and lightly toasted. Serve turkey on buns with desired fresh toppings.
SOUTHWESTERN CHICKEN CHILI
6 cups chicken stock
2 cups pulled Kowalski's Signature Rotisserie Chicken
1 ½ cups whipping cream
1 ½ cups fresh corn kernels
1 ½ cups julienne-cut red bell peppers
3-4 tbsp. chopped jalapeño pepper
¾ tsp. white pepper (or black pepper)
¾ cup flour
¼ cup melted butter
2 tbsp. snipped Kowalski's Fresh Cilantro
Combine first 7 ingredients in a crock pot. Cover; cook on low 5 hrs. In a small bowl, combine flour and butter; stir into hot chili to thicken. Ladle into individual bowls; garnish with cilantro.
SUMMER SLOW COOKER LAMB GYROS
3 tbsp. fresh squeezed lemon juice
2 tbsp. Kowalski's Extra Virgin Olive Oil
3 cloves garlic, crushed
1 ¾ tsp. dried mint
1 ¾ tsp. dried oregano
1 tsp. coarse ground black pepper
¾ tsp. kosher salt
2 lb. lamb top round roast
- 6 slices pita or flatbread
- garnishes, as desired: peeled, seeded and diced cucumber, sliced tomato, sliced red onion, torn Bibb lettuce, shredded radicchio, tzatziki sauce, Kowalski's Fresh Mint
In a medium mixing bowl, whisk together ix oil, juice, garlic, mint, oregano, pepper and salt and pepper. Place roast in a slow cooker. Add marinade; stir to combine. Cook on high 5-6 hrs. or low 7-8 hrs. Remove lamb from the cooker, discard fat and bones, if any. Serve chunks of warm lamb on warm flatbread with desired fresh toppings.
Good to Know:
• Find Tzatziki sauce in the Dairy Department or substitute your favorite Greek salad dressing.
• If you don't like lamb, you can substitute beef top round roast or chuck roast in this recipe.
