GOLDEN VALLEY, Minn. -- Holiday entertaining is practically upon us so having a game plan makes sense right now. Our favorite foodie, Beth Dooley from Wilderness Inquiry joined us today on KARE 11 News@4 to serve up some delicious options.

Smoked Whitefish Mousse

Serves 6 to 8

6 ounces smoked whitefish or trout, skinned, boned and flaked

4 ounces plain cream cheese

2 teaspoons prepared horseradish

2 tablespoons fresh lemon juice

Shot of hot pepper sauce, or more to taste

Turn the whitefish into a medium bowl. Using a fork, smash in the cream cheese, horseradish, lemon juice and pepper sauce to taste. Whip the mixture together with a spoon or fork until it is relatively light and fluffy (you can also do this in a food processor fitted with a steel blade). Turn into a crock to chill. Serve in endive leaves or spread on toast.

Pig Candy

Serves 6 to 8

1 pound thick cut bacon

1/4 cup dark brown sugar

Pinch cayenne pepper (optional)

Preheat the oven to 400 degrees F. Line a baking pan with aluminum foil or parchment paper. Lay the bacon slices on the parchment or foil. Sprinkle the brown sugar overall. Bake the bacon for 30 to 35 minutes or until nicely browned and slightly crisp. Break into pieces and serve on tooth picks.

Radishes on Rye

Serves 6 to 12

1 bunch breakfast radishes or 1 large watermelon radish

2 tablespoon good quality unsalted butter

12 pieces cocktail rye bread

Sprinkle of coarse salt

Old Fashioned Deviled Eggs

Serves 6 to 12

6 eggs, hard cooked and peeled

1/4 cup sour cream

1 tablespoon coarse mustard

Pinch smoked paprika

Shot of hot sauce, to taste

1 tablespoon chopped parsley

Slice the eggs horizontally and turn the yolks into a medium bowl. Using a fork, work in the sour cream, mustard and paprika and hot sauce to taste. Spoon the yolks back into the whites and garnish with the chopped parsley.
