Easy Appetizer Recipes from The Independent

GOLDEN VALLEY, Minn.--  This morning executive chef Phil Edwards from The Independent joined us with a few easy appetizer recipes for your upcoming parties.  Phil said the appetizers have a handful of ingredients and take just minutes to make.

Blackened Walleye Sliders
2oz walleye filet
Blackening seasoning e.g. Paul Prudhomme's
shredded lettuce
mayo
dinner roll; sliced and toasted.

Shake blackening seasoning on fish to taste.  Pan fry filets. When cooking complete, cut into 2x2 squares (or to fit slider bun).  Assemble sandwich with lettuce and mayo on dinner roll.

Chicken Satay
½ cup Soy Sauce
½ cup white wine
¼ cup Brown Sugar, packed
1 T Any Chili Paste or Sri Racha
1 small can pineapple juice

Stir all ingredients together until well mixed. Use to marinate Chicken Satay; between 8 and 24 hours per batch.

Hummus
2 small cans Garbanzo Beans, drained and rinsed
1 t Cumin
1 T Kosher Salt
Juice from 1 lemon
½ c Olive Oil
¼ c Water
¼ c Tahini Sesame Paste
1 garlic clove

Puree all ingredients together until smooth.
