Brenda Langton recipe: Brown rice and egg

GOLDEN VALLEY, Minn.  --  Looking for a healthier family alternative that mixes rice with egg?

Brenda Langton, a well-known writer of healthy cookbooks for kids, has an answer for you. She stopped by KARE 11 News Saturday with a recipe.

Brown rice and egg

Ingredients:
1 egg, beat with 1 tablespoon water and 1/4 teaspoon salt in a bowl
3/4 cup cooked brown rice
1/4 cup of chopped broccoli (small)
1 teaspoon vegetable or olive oil

Directions:

In a small saute' pan, heat oil, add the broccoli  and add 1 tablespoon water.  Cook for 2 minutes over medium heat.  Add rice and 1 more tablespoon of water.  Cover for 1 minute again over medium heat.  Add the egg and stir for a few moments over low heat.  Cover over very low heat for about 1 minute

Serves 1
