Eco-eats from Midtown Global Market: cucumber & strawberry quinoa salad

GOLDEN VALLEY, Minn.--  Midtown Global Market (MGM) will celebrate Earth Day on Saturday, April 16, 2011.

This year's theme is "Water," and guests can learn about conserving water at several educational booths and activities. MGM will also unveil its new rain barrels, part of the MGM's "Green Team" efforts to make the Market more eco-friendly.   This morning, Molly Herrmann from the Kitchen in the Market dropped by our kitchen to tell us more. She also shared her recipe for a delicious quinoa salad.

Cucumber + Strawberry Quinoa Salad
Serves 6

1 box quinoa, cooked according to directions + cooled
1 pint organic strawberries
1 large cucumber
1/4C feta cheese, crumbled
1/4C fresh mint, chopped + extra for garnish
olive oil
salt + pepper

Directions:

Rinse strawberries, hull (remove stem) and cut into 1/4s.

Peel cucumber + cut in half horizontally; remove seeds + cut into cubes.

Combine fruit in a large bowl with mint + feta.

Drizzle with olive oil until moist, season with salt + pepper to taste.

Serve fruit over quinoa, garnish with fresh mint.
