Light summer lunch from Manny's Steakhouse

GOLDEN VALLEY, Minn.--  Exec. chef Josh Hill from Manny's Steakhouse dropped by our kitchen today to share one of their delicious summer lunch recipes.

Grilled Wild Salmon with Heirloom Tomatoes

8 ounces wild king salmon fillet
5 ounces sliced heirloom tomatoes
1 ounce sliced red onion
1 tablespoon oilio verde oil
1 tablespoon chive oil
3 ounces garlic chili butter
1 teaspoon kosher salt
½ teaspoon chopped parsley
1 wedge lemon

Brush salmon with garlic chili butter and place on the grill. Grill to proper temp (medium rare). On a plate arrange tomatoes and onions neatly. Drizzle wth oilio verde and chive oil. Sprinkle with salt.

Place fish on top of tomatoes and give one final baste of butter.
Sprinkle with parsley and serve with lemon.

Arugala and Smoked Mozzarella Salad

4 ounces arugula
¼ ounce garlic chips
2 ounces smoked mozzarella cheese, small dice
2 ounces prosciutto, sliced
½ lemon, juiced
1 ounce extra virgin olive oil
1 pinch sea salt

Mix all ingredients, season with sea salt.
