Twin City Grill meatloaf recipe

Chef Tom Glabach from Twin City Grill shared his delicious meatloaf recipe:

  • 1 oz. (1/4 stick) Butter
  • 1 ¼ cups Minced Onion
  • ¾ cups Minced Celery
  • ¾ cups Minced Pepper
  • 2 tsp Chopped Garlic
  • 1 tsp Chopped Fresh Thyme
  • 1 tsp Chopped fresh Rosemary
  • 1 tsp Chopped fresh Parsley
  • 2 ea. Eggs
  • 1 ½ tsp Dijon Mustard
  • ¼ cup Ketchup
  • 1 tsp Worcestershire
  • ¼ cup Heavy Cream
  • 1 ¼ cup Breadcrumbs
  • 2 lbs  Prime Ground Sirloin
  • 1 tsp Salt
  • 1/8 tsp Pepper

 

Melt butter in a sauce pan and sauté Onions, Celery and Peppers until soft.  Add the Garlic and Herbs and sauté a couple more minutes.  Remove from pan and cool. 

Using a large mixing bowl, Mix together eggs, mustard, Ketchup, Worcestershire, and Cream, and veggie mixture.  Add Breadcrumbs, Ground Sirloin, salt and pepper and mix gently.

Portion into loaves and bake 375 deg for 30-40 minutes.
