GOLDEN VALLEY, Minn -- Julee Daniels from Faribault joined Mike in the KARE 11 Backyard to grill up Feta or Bluecheese Stuffed Portabella Mushrooms. Julee says her recipe is so flavorful that it will satisfy your tastebuds and fill you up, and is also great as a vegetarian option.
Feta or Bluecheese Stuffed Portabella Mushrooms
Portabella (portobello) mushrooms (use as many as you will be serving (take out stem and wash)
1 Tablespoon olive oil
1 teaspoon balsalmic
Reduced fat feta cheese 1/4 Cup or as much feta as needed to fill or cover the center of mushroom
Sprinkle with fresh dill that has been chopped. Grill uncovered for about 20-25 minutes on medium heat. Tent with tinfoil and continue to grill another 10 minutes or when cheese is melted. Use salt and pepper to taste. Julee doesn't add salt because she said the cheese usually has enough.
