GOLDEN VALLEY, Minn -- We're welcoming Bessie Giannakakis to Mike's Backyard BBQ this holiday weekend. Bessie is grilling up Oregano Chicken with Greek Olive Oil Lemon Sauce on a bed of Fries. Bessie said this is a very popular dish served at restaurants all over Greece.
Oregano Chicken with Greek Olive Oil Lemon Sauce on a bed of Fries
3-4 Chicken Breasts or Chicken on the bone (your choice)
Greek Seasoning (sprinkled on chicken)
Oregano (sprinkled on the chicken)
1/2 cup to 1 cup of Greek Olive Oil (depending on how much chicken you make)
2 Fresh squeezed lemons for 4 pieces of chicken, 3-4 of fresh squeezed lemons with more chicken pieces
2 Tablespoons of oregano
Fresh cut potato slices or for a faster meal, circle cut crinkled frozen fries.
Marinate chicken overnight or a few hours prior to grilling. While you are grilling the chicken, either pan fry your potatoes on the grill or put them in the oven for 20 mins. on 450 degrees on a baking sheet. Make your lemon oregano sauce by pouring 1/2 cup of Greek olive oil in a bowl ( or more if you like), squeeze 2 lemons and pour into bowl with olive oil, then crush 2 Tablespoons of oregano into the bowl (or more if you like) and whisk.
Once everything is ready, in a large family style platter, put your fries first then your chicken on top and pour the olive oil lemon sauce all over. Grill up your favorite bread to dip in the extra sauce. Enjoy! This is quick and easy and tastes great. A very popular dish served at restaurants all over Greece.
