GOLDEN VALLEY, Minn. - The snow piles are melting and spring is in the air. It's a perfect time to throw together some salads and more.
Cooks of Crocus Hill Owner Karl Benson joined KARE 11 News @4 to talk about some cool new gadgets that promise to make life easier for foodies.
They included a salad spinner, a julian peeler - it peels and thins slices at the same time, a citrus juicer - also great for Maragritas, A micro plane for zesting, a brand new to the US, Portuguese Olive Oil, and a wonderful apple cider balsamic dressing.
Basic Apple Cider Vinaigrette
(Makes about 1 cup)
¼ cup apple cider vinegar
1 tablespoon fresh Sage
1 small clove garlic, minced
¾ teaspoon mustard
½ teaspoon freshly squeezed lemon
½ teaspoon sugar
¾ cup extra virgin olive oil
Drizzle of Apple Cider Balsamic
Juliane fresh crisp apple
In a small bowl, combine the vinegar, herbs, garlic, mustard, lemon juice, and sugar. Whisk to mix well. Slowly add the oil while whisking, and continue whisking until the mixture is emulsified. Add salt and pepper to taste. Cover and chill the dressing until you are ready to use it. Let stand at room temperature for 5 minutes before whisking again and serving.
Assemble a salad of mixed greens. Toss with vinaigrette. Sprinkle with julienned apples. Drizzle with Apple Cider Balsamic.
