Kowalski's offers a taste of the tropics

GOLDEN VALLEY, Minn. - Looking for a little sunshine this time of year? Hungry for a little fresh fruit? Though citrus season is over and apple season is far away, there are great options to keep you satisfied until more local fruits hit the Produce Department - think tropical!

Chef Rachael Perron from Kowalski's Markets has the scoop on the best choices for the season and some inspired recipes that are simple and versatile, too.

RUM-ROASTED PINEAPPLE

1 large pineapple, peeled, cut into ½" slices, cored
1 cup water
¼ cup Kowalski's Honey
2 tbsp. sugar
2 tbsp. dark rum

In a small saucepan over medium-high heat, combine water, honey, sugar and rum. Bring to a boil, stirring constantly until sugar melts and syrup thickens slightly (about 3 min.). Place pineapple rings on large rimmed baking sheet; cover with syrup. Roast pineapple in a preheated 400° oven 12 min. Turn rings over; roast until tender, turning rings every 5 min. (about 20 min.). Cool slightly on sheet; cut into ?" cubes. Serve warm over ice cream, cheesecake, yogurt, etc. Serves 6.

PINEAPPLE BRUSCHETTA

1 French baguette, cut into about 30 slices
Melted unsalted butter
¼ cup superfine sugar
8 oz. carton mascarpone cheese
1 large pineapple, peeled, cored and finely chopped 
Kowalski's Pure Honey

Lightly brush both sides of each bread slice with melted butter. Sprinkle sugar over both sides of each bread slice. Bake in a preheated 375° oven until crisp on the edges (8-10 min.), turning halfway through; cool. Spread slices evenly with mascarpone; top with pineapple. Drizzle lightly with honey. Makes 30.
