GOLDEN VALLEY, Minn. - Word is spreading about Minneapolis vibrant food scene. Bon Apetit magazine is out with its list of the top 50 best restaurants in America and two Minneapolis restaurants made the list.
They are Borough and World Street Kitchen which started as a food truck. WSK's Sami Wadi joined us in the KARE 11 kitchen to share one of his favorite recipes.
Kimchi Fried Rice with Shrimp
FOR 4 PEOPLE AS A SIDE DISH
2 cups Napa Cabbage kimchi, drained and chopped
1 Tbls garlic, ginger and shallot paste (equal amounts, chopped fine)
1 Tbls sliced Scallion plus 2 Tbls thinly sliced scallion
¼ cup peas, frozen
2 Tbls dark soy sauce
2 Tbls butter
16 Shrimp, peeled and de-veined
6 cups cooked rice
Salt to taste
4 Fried eggs
Toasted sesame seeds
Toasted nori, crushed
Sesame oil to taste
Sriracha to taste
Sauté garlic, ginger, shallot paste in a small amount of oil, then add the shrimp, scallions and season with salt. Add the rice and cook for 1 minute or until the rice is hot then add the kimchi, soy sauce, peas and butter. Keep tossing until the rice is thoroughly mixed and hot.
Divide into 4 bowls garnish with fried eggs, scallion, toasted sesame seeds, nori, sesame oil and sriracha.
