FALCON HEIGHTS, Minn. - The Ghirardelli Chocolate Championship is one of the biggest contests at the Minnesota State Fair. The blue ribbon winner - out of 69 entries - was "Chocolate Raspberry Bite Size Delights" from Lynda Decker. It has an intense and delicious chocolate flavor - and has just six ingredients. Lynda shared her winning recipe and encouraged people to do a test run of their own at home.
Chocolate & Raspberry Bite Size Delights (Recipe from Lynda Decker of South St. Paul)
20 oz Ghirardelli 60% Cacao Bittersweet Chocolate, divided
1/2 cup heavy whipping cream
2 Tbsp butter
1 Tsbp cherry schnapps
1/4 cup white chocolate, chopped
In a medium pan over low heat, melt 16 ounces bittersweet chocolate, constantly stirring until melted. Remove from heat. Using a mini muffin pan lined with silicone mini muffin cups, place one teaspoon of melted chocolate in each cup. Use a chocolate paint brush to bring chocolate up sides of each cup. Refrigerate for five minutes or until
firm. In a medium pan over low heat, melt 8 oz of chocolate , constantly
stirring until melted. Remove from heat. Gradually stir in cream, butter and
schnapps. Beat until smooth, then let cool. Pipe or spoon into each cup and top
with a raspberry. Melt white chocolate in small pan over low heat. Pipe onto
cups in a drizzle effect. Refrigerate until ready to eat. Servings: 15-18.
